Ingredients
  

For the Crust
  • 1 can Nonstick cooking spray Essential for greasing the pan.
  • 26 pieces Oreos Perfect base for a chocolatey crust.
  • 4 Tbsp Butter Melted, use unsalted for better flavor.
  • 1/4 tsp Kosher salt Enhances flavor.
For the Cheesecake Filling
  • 32 oz Cream cheese Softened, at room temperature.
  • 1 cup Granulated sugar Can be substituted with a sugar alternative.
  • 3 large Eggs Room temperature.
  • 1 tsp Pure vanilla extract Enhances the flavors.
  • 1/4 cup Sour cream Can be substituted with Greek yogurt.
  • 2 Tbsp All-purpose flour Omit for gluten-free version.
  • 1/3 cup Heavy cream Whipped for topping.
  • 1.5 cups White chocolate chips Star ingredient.
  • 1 tsp Coconut oil Aids in melting the chocolate.
  • Food coloring Orange or red + yellow, optional.
For Decoration
  • 10 medium Strawberries Fresh decorations.
  • 1 cup Semisweet chocolate chips For decorative drizzle.
  • 1 cup Crushed Oreos Great for topping.
  • 1/2 package Robin's Eggs Fun garnish.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and spray a 9-inch springform pan with nonstick cooking spray.
  2. Crush 26 Oreos into fine crumbs and mix with melted butter and salt, then press into the bottom of the pan.
  3. Bake for 10 minutes until set, then let it cool completely.
Filling
  1. Beat softened cream cheese until smooth, then gradually mix in sugar.
  2. Add eggs one at a time, followed by vanilla extract and sour cream, mixing until combined.
  3. Sift in flour and salt, folding gently to combine.
  4. Melt white chocolate with coconut oil in intervals, then fold into the mixture.
  5. Add food coloring if desired and gently mix.
Assembly and Chilling
  1. Pour the cheesecake mixture over the cooled crust and smooth out.
  2. Cover and chill in the fridge for at least 8 hours.
Decoration and Serving
  1. Remove from the pan, decorate with whipped cream, strawberries, chocolate drizzle, crushed Oreos, and Robin's Eggs.
