  • 200 grams Soba Noodles 100% buckwheat for gluten-free
  • 1 medium Cucumber Spiralized or thinly sliced
  • 2 cups Cabbage Finely shredded
  • 1 medium Carrot Sliced or shredded evenly
  • 2 stalks Green Onions Chopped
  • 2 tablespoons Toasted Sesame Seeds For topping
For the Peanut Dressing
  • 3 tablespoons Peanut Butter Can substitute with almond butter
  • 1 cup Water Adjust for desired consistency
  • 2 tablespoons Tamari or Soy Sauce Use tamari for gluten-free
  • 1 tablespoon Rice Vinegar or Lime Juice For acidity
  • 1 tablespoon Maple Syrup or Honey Maple keeps it vegan
  • 1 teaspoon Sesame Oil For flavor
  • 1 teaspoon Sriracha Adjust for spice preference
Optional Protein Add-ins
  • 1 cup Edamame Beans Light protein addition
  • 200 grams Tofu Firm or extra-firm, cubed

Method
 

Preparation Instructions
  1. Prepare Soba Noodles: Boil water, cook soba noodles for 7-8 minutes, drain, and rinse under cold water.
  2. Slice Vegetables: Spiralize cucumber, shred cabbage, slice or shred carrot, and chop green onions.
  3. Make Peanut Sauce: Whisk together peanut butter, water, tamari, rice vinegar, maple syrup, sesame oil, and sriracha until creamy.
  4. Toss Salad Base: Combine cooled soba noodles with prepared vegetables and gently mix.
  5. Combine with Sauce: Pour peanut sauce over salad base and toss gently.
  6. Add Optional Proteins: Fold in edamame or cubed tofu gently.
  7. Garnish and Serve: Transfer to serving platter, sprinkle with sesame seeds and cilantro if desired.
