- Prepare Soba Noodles: Boil water, cook soba noodles for 7-8 minutes, drain, and rinse under cold water.
- Slice Vegetables: Spiralize cucumber, shred cabbage, slice or shred carrot, and chop green onions.
- Make Peanut Sauce: Whisk together peanut butter, water, tamari, rice vinegar, maple syrup, sesame oil, and sriracha until creamy.
- Toss Salad Base: Combine cooled soba noodles with prepared vegetables and gently mix.
- Combine with Sauce: Pour peanut sauce over salad base and toss gently.
- Add Optional Proteins: Fold in edamame or cubed tofu gently.
- Garnish and Serve: Transfer to serving platter, sprinkle with sesame seeds and cilantro if desired.
