- Preheat your oven to 350°F (175°C). Prepare your baking dish.
- Melt 4 tablespoons of butter in a saucepan over medium heat. Whisk in 4 tablespoons of flour for about 2 minutes.
- Gradually add 2 cups of milk while whisking to prevent lumps. Add Dijon mustard and nutmeg, cooking until thickened, about 5 minutes.
- Layer 8-10 slices of slightly stale brioche in a greased 9x13 inch baking dish.
- Pour the béchamel sauce over the brioche layers and sprinkle with 8 ounces of shredded Gruyère cheese and 6 ounces of diced turkey ham.
- Whisk together 4 eggs with 1 cup of heavy cream, fold into the remaining béchamel, and pour over the layers.
- Bake for 25-30 minutes until bubbly and golden. Broil if necessary.
- Remove from the oven, make indentations, and crack 4 eggs on top. Bake for another 10 minutes.
- Let cool for 5-10 minutes before serving.
