Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your baking dish.
  2. Melt 4 tablespoons of butter in a saucepan over medium heat. Whisk in 4 tablespoons of flour for about 2 minutes.
  3. Gradually add 2 cups of milk while whisking to prevent lumps. Add Dijon mustard and nutmeg, cooking until thickened, about 5 minutes.
  4. Layer 8-10 slices of slightly stale brioche in a greased 9x13 inch baking dish.
  5. Pour the béchamel sauce over the brioche layers and sprinkle with 8 ounces of shredded Gruyère cheese and 6 ounces of diced turkey ham.
  6. Whisk together 4 eggs with 1 cup of heavy cream, fold into the remaining béchamel, and pour over the layers.
  7. Bake for 25-30 minutes until bubbly and golden. Broil if necessary.
  8. Remove from the oven, make indentations, and crack 4 eggs on top. Bake for another 10 minutes.
