Preparation
- In a large mixing bowl, whisk together fresh lemon juice and Dijon mustard until combined. Gradually stream in extra-virgin olive oil while whisking to create a smooth emulsion. Stir in finely chopped red onion and fresh dill, then season with kosher salt and black pepper. Let it sit for 10 minutes.
- Bring a pot of salted water to a boil, add the orzo, and cook according to package instructions (8-10 minutes) until al dente. Drain the orzo and add to the dressing while warm.
- Fold in diced Persian cucumbers, halved cherry tomatoes, drained chickpeas, and sliced Kalamata olives into the orzo mixture. Mix gently until well coated.
- Gently fold in crumbled feta cheese. Taste and adjust seasoning. Garnish with freshly chopped dill if desired. Serve chilled or at room temperature.
