  • 1/2 cup feta cheese omit for a dairy-free option.

Method
 

Preparation
  1. In a large mixing bowl, whisk together fresh lemon juice and Dijon mustard until combined. Gradually stream in extra-virgin olive oil while whisking to create a smooth emulsion. Stir in finely chopped red onion and fresh dill, then season with kosher salt and black pepper. Let it sit for 10 minutes.
  2. Bring a pot of salted water to a boil, add the orzo, and cook according to package instructions (8-10 minutes) until al dente. Drain the orzo and add to the dressing while warm.
  3. Fold in diced Persian cucumbers, halved cherry tomatoes, drained chickpeas, and sliced Kalamata olives into the orzo mixture. Mix gently until well coated.
  4. Gently fold in crumbled feta cheese. Taste and adjust seasoning. Garnish with freshly chopped dill if desired. Serve chilled or at room temperature.
