Preparation Steps
- In a medium bowl, whisk together powdered sugar and cocoa powder until free of lumps.
- Stir in corn syrup, salt, and peppermint extract into the dry mixture until a dough forms.
- Lightly dust work surface with powdered sugar, transfer dough and knead until smooth and pliable.
- Divide dough into tablespoon-sized portions, roll into balls and flatten into disks.
- Place disks on parchment-lined baking sheet and freeze for 30 minutes.
- Melt semi-sweet chocolate chips in microwave, stirring until smooth, optionally adding coconut oil.
- Dip each chilled disk in melted chocolate, letting excess drip off.
- Return dipped patties to parchment-lined tray, optionally sprinkle with crushed peppermint before setting.
- Refrigerate for 20-30 minutes until chocolate is solid.
- Store finished patties in an airtight container in the refrigerator for up to 2 weeks.
