Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large cast iron skillet over medium-high heat. This takes about 2 minutes.
  2. Add 1 pound of lean ground beef to the skillet, breaking it up with a wooden spoon. Cook for 3 to 5 minutes until browned, then drain excess fat.
  3. Stir in 1 diced sweet onion and 1 diced green bell pepper. Cook for 3 to 4 minutes until softened.
  4. Mix in 2 tablespoons of tomato paste, 2 minced garlic cloves, 1 teaspoon of smoked paprika, 1 teaspoon of chili powder, and a pinch of cayenne pepper. Cook for 1 minute.
  5. Pour in 1 cup of beef stock and scrape up any browned bits from the skillet. Allow the mixture to come together for about 1-2 minutes.
  6. Incorporate ½ cup of ketchup, 1 tablespoon of Dijon mustard, 1 tablespoon of Worcestershire sauce, and 2 tablespoons of brown sugar. Season with kosher salt and black pepper to taste. Stir well.
  7. Bring to a gentle boil, then reduce heat to low, allowing to simmer uncovered for 15 to 20 minutes. Stir occasionally until thickened.
  8. Spoon the mixture onto your favorite buns and serve immediately.
