  • 15 oz Ricotta Cheese Can substitute with goat cheese or cheddar
  • 2 cups Marinara Sauce Store-bought or homemade, gluten-free recommended
  • 2 Tbsp Olive Oil Can substitute with avocado oil
  • 1 Tbsp Basil Fresh is preferred
  • 2 cloves Garlic Minced

  • 2 cups Spinach Layered in for nutrients
  • 1 cup Mushrooms Sautéed for earthy richness
  • 1 cup Ground Turkey or Chicken For meat lovers
  • 1.5 cups Cheese Variations Mozzarella or feta can be used

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. Wash and slice the zucchini into thin rounds, about ¼-inch thick. Sauté in olive oil for 3–5 minutes.
  3. Spread a layer of marinara sauce across the bottom of the baking dish.
  4. Layer zucchini slices over the marinara, dollop ricotta cheese in between, and repeat layers until filled.
  5. Drizzle olive oil, sprinkle basil and minced garlic on top.
  6. Bake for about 30 minutes until ricotta is bubbly and top is golden.
  7. Allow to cool for around 10 minutes before slicing and serving.
