For the Base

Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, cook your chorizo or breakfast sausage with diced onion and red bell pepper for about 7–10 minutes.
  3. In a mixing bowl, whisk together the eggs, milk or half-and-half, cumin, paprika, and salt until fully combined.
  4. Layer half of the corn tortillas across the bottom of your greased baking dish.
  5. Spread half of the cooked sausage mixture over the tortillas, followed by a layer of cheese and egg mixture.
  6. Repeat the layering process with the remaining tortillas, sausage mixture, cheese, and egg mixture.
  7. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 10–15 minutes.
  8. Remove from the oven and let it rest for about 10 minutes before serving.
