  1. Preheat your oven to 400°F (200°C) and grease four 8-ounce ramekins with butter or cooking spray.
  2. Heat olive oil in a skillet over medium-high heat. Sauté the minced shallots for about 3 minutes until soft.
  3. Add mixed mushrooms to the skillet with a pinch of salt and sauté for another 5 minutes until tender.
  4. Stir in chopped fresh thyme, mix well, and set the skillet aside to cool slightly.
  5. In a large mixing bowl, whisk together eggs, whole milk, kosher salt, and ground black pepper until smooth.
  6. Distribute the sautéed mushroom mixture evenly into the greased ramekins, then sprinkle mozzarella cheese on top.
