Method
 

Step-by-Step Instructions
  1. Peel the oranges, removing the zest and white pith.
  2. Puree the peeled oranges until smooth.
  3. Combine orange puree, lemon juice, and sugar in a pot. Add a tied spice bag.
  4. Heat the mixture over medium-high heat until it reaches a rolling boil.
  5. Cook until the temperature reaches gel stage at 220°F.
  6. Remove the spice bag after reaching gel stage.
  7. Ladle the hot jam into clean jars, leaving 1/4 inch of headspace.
  8. Process the jars in boiling water for 10 minutes.
  9. Cool jars completely and check seals.
