Step-by-Step Instructions
  1. Preheat the oven to 180°C (350°F) and grease your financier molds with butter.
  2. In a saucepan, melt the unsalted butter over medium heat until golden brown, about 5–7 minutes. Let cool slightly.
  3. In a mixing bowl, combine almond flour, powdered sugar, all-purpose flour, and a pinch of salt. Whisk together.
  4. Add room-temperature egg whites and vanilla extract to the dry ingredients. Whisk until smooth and glossy.
  5. Fold the cooled browned butter into the batter carefully.
  6. Fill each mold with batter to about three-quarters full and place peach slices on top.
  7. Bake for 18–20 minutes until golden brown with a firm edge.
  8. Cool in molds for 5 minutes, then transfer to a wire rack to cool completely.
