  2. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring between each heating until smooth. Allow to cool, then stir in the homemade mint extract.
  3. Gradually pour the melted chocolate mixture into the bowl with dry ingredients. Fold together until just combined.
  4. Dust your hands with powdered sugar and use a cookie scoop to portion the mixture. Roll into uniform balls about one inch in diameter.
