- In a large saucepan, add the chopped rhubarb, organic cane sugar, orange zest, and ground cardamom if using. Pour in the fresh orange juice and stir gently until all ingredients are well mixed.
- Place the saucepan over medium heat and continuously stir the mixture for about 2-3 minutes until the sugar dissolves and the rhubarb releases its juices.
- Once the mixture has come together, bring it to a gentle simmer. Uncover and let it cook for 5-10 minutes while stirring occasionally.
- After simmering, remove from heat and allow the compote to cool slightly at room temperature. Transfer to a clean jar or container and let it cool completely before sealing.
