- Whisk and scramble eggs. Heat neutral oil in a skillet, whisk eggs, pour into skillet, and cook for 3-4 minutes. Set aside.
- Prepare the sauce. Combine soy sauce, mirin, sesame oil, and sugar in a bowl, whisk until smooth.
- Sauté the Spam. Dice Spam, sauté in the skillet for 5-6 minutes, add sauce, cook for another 2-3 minutes.
- Mix the rice mixture. Combine rice, sautéed Spam, scrambled eggs, scallions, mayo, seaweed, and furikake in a bowl.
- Shape the rice balls. Form rice mixture into balls the size of golf balls, using wet hands to prevent sticking.
- Serve and enjoy. Serve warm or chilled with soy sauce for dipping, garnish with additional scallions or sesame seeds.
