  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil or avocado oil for cooking
  • 1 teaspoon smoked paprika for flavor
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon garlic powder or fresh minced garlic

For the Bowl
  • 2 cups cooked rice white, jasmine, or brown
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 whole lime for juice
  • 1 small red onion thinly sliced
  • 1/4 cup cilantro freshly chopped
For the Creamy Sauce
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lime juice for dressing
  • 1 tablespoon lime zest for dressing
  • 2 tablespoons cilantro finely chopped for sauce

Method
 

Steps
  1. Prepare Ingredients: Cut chicken into even cubes. Remove corn kernels from cob if using fresh.
  2. Cook Chicken: Heat oil in a skillet, add chicken cubes, season, and cook until golden brown.
  3. Combine Corn: Add corn to the skillet, stir and warm for a few minutes.
  4. Make Sauce: Mix yogurt, mayonnaise, minced garlic, lime juice, lime zest, and chopped cilantro in a separate bowl.
  5. Final Assembly: Once corn is warmed, stir in cooked rice and squeeze lime juice over mixture.
  6. Serve: Spoon mixture into bowls, garnish with red onion and cilantro, drizzle with sauce.
