  • 1 cup shredded zucchini
  • 1 cup peeled and diced apple Choose from Granny Smith, Honeycrisp, or Fuji.
  • 1/2 cup chopped walnuts or pecans Optional.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Whisk together all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg in a medium bowl.
  3. In a large mixing bowl, blend vegetable oil, granulated sugar, and light brown sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  5. Gently fold in shredded zucchini and diced apple into the wet mixture.
  6. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  7. If using, fold in chopped walnuts or pecans into the batter.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
