- Wash and hull strawberries, then dry completely.
- Dust countertop with cornstarch or mochiko flour.
- Mix mochiko flour and sugar in a bowl. Gradually add water, vinegar, and food coloring.
- Cover and microwave the mixture, stirring every minute for about four minutes until glossy.
- Dust hands with cornstarch and flatten portions of mochi into pancakes.
- Place an upside-down strawberry in the center, fold edges and pinch to seal.
- Cool, then serve on a plate dusted with cornstarch.
