Step-by-Step Instructions for Summer Watermelon Mint Juice
  1. Wash the watermelon and fresh mint leaves thoroughly under cold water. Set aside the mint leaves and slice the watermelon in half.
  2. Using a large spoon, extract approximately 4 cups of the juicy watermelon flesh from one half, discarding any seeds.
  3. In a high-powered blender, combine the cubed watermelon, fresh mint leaves, lime juice, honey, and cold or sparkling water.
  4. Blend on high for 30 to 45 seconds until smooth. Blend for an additional 10 seconds if chunks remain.
  5. Optionally, strain the juice through a fine mesh sieve for a smoother texture.
  6. Transfer the juice to a glass pitcher and chill in the refrigerator for about 15 minutes.
  7. Serve the chilled juice over ice in tall glasses, garnished with cucumber slices, fresh mint, or small watermelon wedges.
