- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the cooked and chopped broccoli with an egg, crushed Ritz crackers, cheddar cheese, garlic powder, and a sprinkle of salt. Mix thoroughly.
- Generously grease a mini muffin tin with cooking spray or butter.
- Scoop the broccoli mixture into each greased muffin cup, filling them to the top and pressing down firmly.
- Sprinkle additional cheddar cheese on top of each filled muffin cup.
- Place the muffin tin into the preheated oven and bake for 14-16 minutes until golden brown and crispy.
- Allow the cups to cool in the tin for at least 5 minutes before removing.
