  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast ensure it's fresh

  • 2 tablespoons olive oil plus extra for brushing

Method
 

Dough Preparation
  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Allow the mixture to sit for about 5 minutes until it becomes frothy.
  2. Once the yeast mixture is frothy, add all-purpose flour, salt, and olive oil. Mix until a shaggy dough forms.
  3. Transfer the dough onto a floured surface and knead for 3-4 minutes until smooth and elastic.
  4. Place the kneaded dough in an oiled bowl, cover it, and let it rise in a warm area for about 30 minutes or until doubled in size.
  5. Gently punch down the dough, divide it into 6 equal pieces, and shape each into a ball.
  6. Flatten each ball into a circle roughly 6 inches in diameter.
  7. Heat a cast iron skillet over medium heat, brush lightly with olive oil, and cook each pita for 2-3 minutes on each side until golden brown.
  8. Keep pitas warm in a clean kitchen towel and serve immediately filled with your favorite fillings.
