Step-by-Step Instructions
  1. Prepare Oil: Place 1 cup of refined oil in the freezer for about 1 to 2 hours until very cold.
  2. Mix Coffee: Combine 1 cup of black coffee with 3 tablespoons of sugar in a medium saucepan and whisk until dissolved.
  3. Bloom Agar: Sprinkle 2 teaspoons of agar agar powder into the mixture and let it sit for about 10 minutes.
  4. Heat Mixture: Heat the mixture over low to medium heat, stirring continuously for about 3 to 5 minutes until smooth.
  5. Drop Caviar: Use a dropper to drop small amounts of the mixture into the cold oil, forming gel beads.
  6. Strain & Rinse: After 5 minutes, collect the caviar with a fine mesh strainer and rinse under cold water.
  7. Store: Place the caviar in a container and store at room temperature or in the fridge until use.
