Method
 

Step‑by‑Step Instructions
  1. In a large serving bowl, place 6 cups of mixed spring greens as the foundation of your Christmas Salad. Ensure the greens are well-washed and dried.
  2. Peel and segment 1 1/4 cups of fresh oranges, and scatter the orange segments over the greens, followed by 1/2 cup of pomegranate seeds.
  3. Crumble 1/2 cup of feta cheese over the top of the salad directly from a block.
  4. Roughly chop 1/2 cup of candied pecans and sprinkle them over the salad.
  5. In a separate small bowl, whisk together 1/3 cup of olive oil, 1 tablespoon of honey, 2 teaspoons of Dijon mustard, and 2 tablespoons of apple cider vinegar. Add 1 tablespoon of minced shallot, and season with salt and pepper to taste.
