- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1/3 cup granulated sugar, 1/2 teaspoon salt, 1 tablespoon baking powder, and 1 teaspoon cinnamon until well combined.
- Add 1/2 cup of cold butter, cut into small cubes, to the dry ingredients. Work the butter into the flour until the mixture resembles coarse crumbs.
- Gently fold in 1 cup of chopped apples and 1/2 cup of cinnamon chips.
- In a separate bowl, whisk together 1 large egg, 1 teaspoon vanilla extract, and 1/4 cup of unsweetened applesauce until smooth.
- Pour the wet ingredients into the dry mixture, stirring gently until just combined.
- Transfer the dough to a floured surface and divide it in half. Shape each half into a circle about 3/4 inch thick.
- Brush the tops of the circles with a little water or milk. In a small bowl, mix 2 tablespoons of coarse sugar and 1/2 teaspoon of cinnamon, then sprinkle it over each circle.
- Using a sharp knife, slice each circle into 6 wedges and separate them on the baking sheet lined with parchment paper.
- Place the baking sheet with the shaped scones into the freezer for 30 minutes.
