  • 1 medium Cucumber Slice into half-moons; substitute with zucchini.
  • 1 medium Avocado Peeled and diced; replace with silken tofu if desired.
For the Dressing
  • 3 tablespoons Olive Oil Extra virgin or infused for flavor.
  • 2 tablespoons Lemon Juice Freshly squeezed or white balsamic vinegar.
  • 1 tablespoon Honey or Maple Syrup Adjust sweetness to taste.
  • 1/2 teaspoon Salt To taste.
  • 1/4 teaspoon Black Pepper Freshly ground, to taste.

Method
 

Preparation
  1. Wash all fresh produce under cool running water. Slice radishes into thin rounds.
  2. Chop fresh herbs finely, peel and dice avocado, and slice cucumbers.
  3. Lay out mixed greens in a large bowl.
Combine
  1. Add mixed greens as a base, then toss in radishes, cucumbers, avocado, and herbs.
  2. Gently combine with salad tongs, ensuring even distribution.
Make Dressing
  1. Whisk together olive oil, lemon juice, honey or maple syrup, salt, and pepper.
  2. Whisk vigorously until smooth and well-blended.
Dress Salad
  1. Drizzle dressing over salad mixture and gently toss again.
  2. Ensure every piece is lightly coated with dressing.
Serve
  1. Transfer salad to serving platter or bowls and garnish with herbs.
  2. Serve immediately or let chill in the fridge for 30 minutes.
