  • 2 tablespoons Cider Vinegar
  • 1 tablespoon Mustard
  • 1 clove Garlic minced
  • 1 tablespoon Honey adjust to taste
  • 1 pinch Salt to taste
  • 1 small Shallot minced
  • 1 whole Strawberry diced for dressing
Salad
  • 3 cups Romaine Lettuce washed and torn
  • 4 cups Spinach washed
  • 2 cups Strawberries sliced
  • 1/2 cup Feta crumbled
  • 1/4 cup Almonds slivered and toasted
  • 1/2 whole Red Onion thinly sliced

Method
 

Preparation
  1. Begin by heating a skillet over medium heat and toasting slivered almonds for about 4 minutes until golden brown. Transfer to a plate to cool.
  2. Prepare ingredients: mince the garlic, thinly slice the shallot, dice one strawberry, and slice the red onion.
  3. In a blender, combine olive oil, cider vinegar, mustard, minced garlic, shallot, diced strawberry, honey, and a pinch of salt. Blend until smooth.
  4. Wash and dry the romaine and spinach. Tear romaine into bite-sized pieces and keep spinach leaves whole.
  5. In a large mixing bowl, combine romaine and spinach with feta, sliced onion, quartered strawberries, and toasted almonds.
  6. Serve immediately, drizzling dressing over the salad or on the side.
