Ingredients
  

For the Salad
  • 1 cup Corn fresh, frozen, or canned (drained)
  • 1 medium Red Bell Pepper diced
  • 1 small Purple Onion diced
  • 1 cup Cheddar Cheese freshly grated
  • 2 cups Chili Fritos broken into pieces
For the Dressing
  • 1/2 cup Mayonnaise or ranch dressing/Greek yogurt
Optional Add-Ins
  • 1 medium Diced Avocado
  • 1 cup Cooked Ground Beef or Black Beans for protein
  • 1/4 cup Diced Jalapeños for spice

Method
 

Prep and Combine
  1. Gather all your ingredients for the salad. Dice the red bell peppers and purple onion, and grate the cheddar cheese. Drain the canned corn if using.
  2. Open the bag of Chili Fritos and gently break them into smaller pieces. Aim for one-inch pieces.
  3. To serve later, keep the ingredients separate until ready. Place diced vegetables, cheese, and corn in a large serving bowl, but add Fritos just before serving.
  4. Just before serving, combine all the prepared ingredients in a bowl. Add the mayonnaise and toss until evenly coated.
  5. Serve immediately with additional cheese or jalapeños on top if desired.

Notes
