Prep and Combine
- Gather all your ingredients for the salad. Dice the red bell peppers and purple onion, and grate the cheddar cheese. Drain the canned corn if using.
- Open the bag of Chili Fritos and gently break them into smaller pieces. Aim for one-inch pieces.
- To serve later, keep the ingredients separate until ready. Place diced vegetables, cheese, and corn in a large serving bowl, but add Fritos just before serving.
- Just before serving, combine all the prepared ingredients in a bowl. Add the mayonnaise and toss until evenly coated.
- Serve immediately with additional cheese or jalapeños on top if desired.
