  • 3 cloves Garlic Freshly minced
For the Sauce
  • 2 tablespoons Butter Margarine can be used as a substitute
  • 1 tablespoon Lime Juice Freshly squeezed
For Garnishing
  • 1 tablespoon Fresh Cilantro Optional

Cooking Steps
  1. Heat a large skillet over medium heat and pour in olive oil. Allow to heat for 1-2 minutes until shimmering.
  2. Add sliced zucchini to the skillet, season with salt and pepper, and sauté for about 3 minutes until tender-crisp, then transfer to a plate.
  3. Season sliced chicken breasts with smoked paprika, chili powder, salt, and black pepper.
  4. Return skillet to heat, add more olive oil if needed, and arrange chicken strips in a single layer. Cook undisturbed for about 4 minutes until golden brown.
  5. Flip the chicken over and sprinkle in minced garlic. Cook for an additional 2 minutes on low heat.
  6. Pour lime juice and add butter to the skillet, stirring gently for 3-5 minutes until butter melts and chicken is cooked through.
  7. Add sautéed zucchini and corn to the skillet, stirring to combine and coat everything in the garlic butter sauce.
  8. Remove from heat and garnish with chopped fresh cilantro if desired.
