Cooking Steps
- Heat a large skillet over medium heat and pour in olive oil. Allow to heat for 1-2 minutes until shimmering.
- Add sliced zucchini to the skillet, season with salt and pepper, and sauté for about 3 minutes until tender-crisp, then transfer to a plate.
- Season sliced chicken breasts with smoked paprika, chili powder, salt, and black pepper.
- Return skillet to heat, add more olive oil if needed, and arrange chicken strips in a single layer. Cook undisturbed for about 4 minutes until golden brown.
- Flip the chicken over and sprinkle in minced garlic. Cook for an additional 2 minutes on low heat.
- Pour lime juice and add butter to the skillet, stirring gently for 3-5 minutes until butter melts and chicken is cooked through.
- Add sautéed zucchini and corn to the skillet, stirring to combine and coat everything in the garlic butter sauce.
- Remove from heat and garnish with chopped fresh cilantro if desired.
