Method
 

Cooking Steps
  1. Heat a heavy-bottomed skillet over medium heat. Melt 2 tablespoons of butter combined with 1 tablespoon of olive oil. Add diced baby potatoes, seasoning with salt, pepper, rosemary, and thyme. Sauté for about 10-12 minutes until golden brown and tender.
  2. Increase heat slightly and melt another tablespoon of butter in the same skillet. Add the sirloin steak pieces, season with salt and pepper, and sear for 2-3 minutes on each side until a rich, brown crust forms.
  3. Lower heat to medium-low, add remaining tablespoon of butter to the skillet, and stir in 3 cloves of minced garlic. Sauté for 1 minute until fragrant.
  4. Return the seared steak bites and crispy baby potatoes to the skillet with garlic butter. Toss gently to coat in the sauce, allowing to heat through for an additional 1-2 minutes.
  5. Transfer to a serving platter. Garnish with freshly chopped parsley and sprinkle with flaky salt or grated Parmesan if desired.
