Cooking Steps
- Heat a heavy-bottomed skillet over medium heat. Melt 2 tablespoons of butter combined with 1 tablespoon of olive oil. Add diced baby potatoes, seasoning with salt, pepper, rosemary, and thyme. Sauté for about 10-12 minutes until golden brown and tender.
- Increase heat slightly and melt another tablespoon of butter in the same skillet. Add the sirloin steak pieces, season with salt and pepper, and sear for 2-3 minutes on each side until a rich, brown crust forms.
- Lower heat to medium-low, add remaining tablespoon of butter to the skillet, and stir in 3 cloves of minced garlic. Sauté for 1 minute until fragrant.
- Return the seared steak bites and crispy baby potatoes to the skillet with garlic butter. Toss gently to coat in the sauce, allowing to heat through for an additional 1-2 minutes.
- Transfer to a serving platter. Garnish with freshly chopped parsley and sprinkle with flaky salt or grated Parmesan if desired.
