  • 1 can chickpeas drained
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 cup artichoke hearts quartered
  • 1/2 cup feta cheese crumbled
  • dill chopped
  • parsley chopped
  • mint chopped
For the Dressing
  • 3 tablespoons red wine vinegar
  • 1 lemon juiced
  • 1/4 cup olive oil extra virgin
  • 1 teaspoon dried oregano
  • red pepper flakes to taste

Method
 

Step-by-Step Instructions
  1. In a small jar, combine red wine vinegar, lemon juice, olive oil, dried oregano, and red pepper flakes. Shake well for 30 seconds.
  2. In a large mixing bowl, add chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, artichoke hearts, and feta cheese. Add chopped dill, parsley, and mint.
  3. Pour the dressing over the salad and toss gently to combine. Aim to combine for about 1 minute.
  4. Taste and adjust seasoning with salt and pepper. Let sit for at least 15 minutes before serving.
