  • 1 cup orzo small rice-shaped pasta
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumbers diced Persian cucumbers preferred
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 cup feta cheese crumbled
  • 2 tablespoons dill fresh preferred
  • 1/4 medium red onion diced
For the Dressing
  • 2 tablespoons Dijon mustard omit if sensitive to mustard
  • 1/4 cup lemon juice freshly squeezed
  • 1/2 cup extra-virgin olive oil base of the dressing
  • 1 teaspoon kosher salt to season
  • 1/4 teaspoon black pepper to season

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together lemon juice and Dijon mustard until smooth. Gradually drizzle in olive oil while whisking to emulsify. Stir in red onion and dill, then season with salt and pepper. Set aside.
  2. Bring a large pot of salted water to a rolling boil and add the orzo. Cook for 8-10 minutes until al dente, then drain thoroughly and toss in the dressing.
  3. Add cucumbers, cherry tomatoes, chickpeas, and olives to the bowl with orzo and dressing. Gently toss until well mixed.
  4. Crumble feta cheese over the salad and fold it in carefully.
  5. Spoon individual portions into bowls and garnish with fresh dill. Chill for 30 minutes before serving.
