Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions for about 8-10 minutes until al dente. Reserve a cup of pasta water, drain, and set aside.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the drained white beans and cook for 2-3 minutes.
  3. Add lemon zest and juice to the skillet, stir to combine, and let simmer for 1 minute.
  4. Add drained pasta to the skillet, tossing gently. If it seems dry, add reserved pasta water gradually until creamy.
  5. Season with salt and pepper to taste. Optionally, add Parmesan cheese, stir, and serve immediately.
