Ingredients
  

For the Topping
  • 2 lbs Russet Potatoes Peel and chop for smooth mashing.
  • 1 cup Cauliflower Florets Can substitute with more potatoes.
  • 1/2 cup Grated Parmesan Cheese Optional but recommended for flavor.
  • 2 tbsp Olive Oil Used for mashing and cooking.
For the Filling
  • 1 lbs Ground Turkey Can substitute with ground beef or chicken.
  • 1 medium Diced Onion Fresh onions preferred.
  • 2 cloves Minced Garlic Fresh cloves preferred but powder works.
  • 2 medium Diced Carrots Fresh or frozen works wonderfully.
  • 1 cup Frozen Peas and Corn Feel free to substitute with other veggies.
For Cooking Liquid
  • 1 cup Chicken Broth (Low or No Salt) Can be replaced with beef or vegetable broth.
  • 2 tbsp Tomato Paste Can be omitted if unavailable.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease your casserole dish with olive oil.
  2. In a pot, boil water and cook chopped potatoes and cauliflower for 10 minutes until tender.
  3. Drain and mash the potatoes and cauliflower with olive oil, garlic powder, salt, and pepper until creamy.
  4. Heat olive oil in a skillet and brown the ground turkey for 5-7 minutes.
  5. Add diced onions and minced garlic, cooking until onions are translucent, about 2-3 minutes.
  6. Stir in diced carrots and cook for about 5 minutes until tender.
  7. Combine turkey mixture with chicken broth and tomato paste, cooking for 3-5 minutes.
  8. Fold in frozen peas and corn, cooking until heated through.
  9. Layer the turkey mixture in the casserole dish and spoon creamy topping over it.
  10. Bake in the preheated oven for about 30 minutes until golden brown.
  11. Let cool for a few minutes before serving.
