Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with olive oil.
  2. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, and chives to create the herb oil.
  3. Peel the Yukon gold potatoes and slice them into 1/2 inch thick rounds.
  4. Use a heart-shaped cookie cutter to cut out hearts from each potato slice.
  5. Toss the heart-shaped potato pieces with the herb oil, season with sea salt and pepper.
  6. Arrange the potatoes in a single layer on the greased baking sheet.
  7. Roast the potatoes for 20-30 minutes, turning halfway through until golden brown and tender.
  8. Remove from the oven and serve hot.
