Step-by-Step Instructions
  1. Marinate the chicken by combining with soy sauce and pepper. Cover and refrigerate for at least 30 minutes.
  2. Prepare vegetables: sauté bell peppers in oil for 2 minutes, remove, then fry carrots and potatoes for 5 minutes.
  3. Cook aromatics by sautéing garlic until fragrant, then add onions and cook until translucent.
  4. Brown the marinated chicken in the same pot for 6-8 minutes until cooked through.
  5. Integrate sauces: add marinade, laurel leaves, and tomato sauce. Cook for 5 minutes.
  6. Simmer the stew for 15 minutes after adding 2 cups of hot water, reduce heat to low.
  7. Incorporate peanut butter and atsuete powder, mixing until smooth.
  8. Add cooked carrots, potatoes, pickle relish, and chilies. Cook uncovered for 5-7 minutes.
  9. Prepare to serve by adding grated cheese and sautéed bell peppers, serve hot.
