Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 small diced onion and sauté for about 5 minutes until translucent.
  3. Stir in 2 minced garlic cloves and 1 pound of sliced mushrooms; cook for about 10 minutes until golden brown.
  4. Mix in 1 teaspoon of fresh thyme and let cook for about a minute.
  5. Pour in 4 cups of vegetable or chicken broth and bring to a gentle simmer. Cook for about 10 minutes.
  6. If desired, sprinkle in 1 tablespoon of flour and stir continuously for 2 minutes to thicken.
  7. Lower the heat and mix in 1 cup of heavy cream, cooking for another 5 minutes.
