- In a large pot, heat a splash of oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
- Add chopped onion, diced carrots, and chopped celery to the pot, stirring them in with the beef. Cook for about 5 minutes.
- Stir in diced or crushed tomatoes and beef broth, bring to a gentle simmer over medium-high heat for 5 minutes.
- Sprinkle in garlic powder, dried oregano, and salt and pepper to taste. If using pasta, add small pasta at this point.
- Continue to simmer for about 10 minutes, or until the pasta is cooked al dente.
- Check the consistency of the soup; add more beef broth or water if too thick, letting it simmer for an additional 5 minutes.
- Taste and adjust seasoning as needed before serving in bowls.
