Soup Base
  • 1 pound Ground Beef can substitute with ground turkey
  • 2 cups Vegetables (carrots, celery, onion) fresh or frozen mixed veggies
  • 1 can diced or crushed tomatoes canned for broth
  • 4 cups Beef Broth opt for low-sodium for healthier choice
Seasoning
  • 1 teaspoon Garlic Powder fresh minced garlic preferred
  • 1 teaspoon Dried Oregano Italian seasoning as alternative
  • Salt to taste
  • Pepper to taste
Added Heartiness
  • 1 cup small pasta optional, gluten-free variety works

Method
 

Directions
  1. In a large pot, heat a splash of oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
  2. Add chopped onion, diced carrots, and chopped celery to the pot, stirring them in with the beef. Cook for about 5 minutes.
  3. Stir in diced or crushed tomatoes and beef broth, bring to a gentle simmer over medium-high heat for 5 minutes.
  4. Sprinkle in garlic powder, dried oregano, and salt and pepper to taste. If using pasta, add small pasta at this point.
  5. Continue to simmer for about 10 minutes, or until the pasta is cooked al dente.
  6. Check the consistency of the soup; add more beef broth or water if too thick, letting it simmer for an additional 5 minutes.
  7. Taste and adjust seasoning as needed before serving in bowls.
