Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add a finely diced onion, sautéing for 3-4 minutes until translucent.
  2. Add 3 cloves of minced garlic and 8 ounces of sliced mushrooms to the pan. Sauté for another 5-7 minutes until browned.
  3. Stir in 1 cup of Arborio rice, toasting for 1-2 minutes.
  4. Pour in 4 cups of vegetable broth slowly, stirring frequently, allowing rice to absorb the liquid, approximately 18-20 minutes.
  5. When rice is creamy, stir in 1 cup of coconut milk and 1/4 cup of nutritional yeast, mixing thoroughly.
  6. Garnish with 1/4 cup of freshly chopped parsley and serve immediately.
