Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash 3 ripe bananas until smooth. Add in 1/2 cup granulated sugar, 1/4 cup brown sugar, 1/3 cup melted unsalted butter, 2 large eggs, and a teaspoon of vanilla extract. Stir until well blended.
  3. Sprinkle 1 teaspoon baking soda and 1/2 teaspoon salt over the wet mixture, then gently fold in 1 and 1/2 cups all-purpose flour.
  4. Mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon in a small bowl.
  5. Pour half of the banana batter into the prepared loaf pan, then sprinkle half of the cinnamon sugar mixture over the batter.
  6. Pour the remaining banana batter over the cinnamon sugar layer and top with the remaining cinnamon sugar mixture.
