Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  2. Carefully peel and thinly slice your sweet potatoes into about 1/8-inch rounds.
  3. In a small saucepan, melt the butter over medium-high heat. Add minced garlic and diced shallot, sautéing for 2-3 minutes.
  4. Remove from heat, then stir in thyme, kosher salt, black pepper, heavy cream, and parmesan cheese until well-combined.
  5. Pour the sauce over the sweet potato slices in a mixing bowl and toss to coat. Arrange the potatoes upright in the baking dish.
  6. Cover the dish with aluminum foil and bake for 50-60 minutes until fork-tender.
  7. Remove the foil in the last 10 minutes for a golden crust, or broil for an additional 2-3 minutes.
  8. Garnish with fresh thyme sprigs before serving.
