Ingredients
  

For the Chicken
  • 1 pound Boneless, skinless chicken breasts
For the Vegetables
  • 1 medium Yellow onion
  • 1 medium Red bell pepper
For the Sauce
  • 4 cloves Garlic minced
  • 2 tablespoons Neutral oil avocado or vegetable oil
  • 1/4 cup Honey or maple syrup for vegan option
  • 1/4 cup Low-sodium soy sauce or Tamari for gluten-free
  • 2 tablespoons Ketchup low-sugar preferred
  • 1 tablespoon Rice vinegar or apple cider vinegar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water for slurry
Optional Ingredients
  • 1 inch Fresh ginger grated
  • 2 tablespoons Scallions for garnish
  • 1 tablespoon Sesame seeds or crushed peanuts
  • 1/2 teaspoon Red pepper flakes for heat

Method
 

Steps
  1. Heat a large skillet over medium-high heat and add a splash of neutral oil.
  2. Add the chicken pieces and sauté for 6–8 minutes until golden brown and cooked through.
  3. In the same skillet, add more oil if necessary, then toss in sliced onion and red bell pepper.
  4. Sauté the vegetables for 4–5 minutes until softened.
  5. Add minced garlic and cook for an additional 30 seconds until fragrant.
  6. Whisk together honey, soy sauce, ketchup, and vinegar until smooth to prepare the sauce.
  7. Make a cornstarch slurry by mixing cornstarch and water until smooth.
  8. Combine the sautéed vegetables with the sauce in the skillet and simmer.
  9. Add the cornstarch slurry and simmer until the sauce thickens.
  10. Return the cooked chicken to the skillet and toss everything to coat.
  11. Serve over rice or noodles, garnished with scallions and sesame seeds.
