  • 1/4 cup Honey Substitute with maple syrup for vegan option
  • 1/4 cup Lime Juice Opt for fresh lime juice
For the Avocado Rice
  • 2 medium Avocado Diced; can use mashed white beans as alternative
  • 2 cups Cooked Rice Brown rice adds fiber or cauliflower rice for a low-carb option
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Garnish
  • 1/4 cup Fresh Cilantro Can substitute with parsley

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together honey, lime juice, salt, and pepper. Marinate the chicken for at least 30 minutes.
  2. Preheat grill/skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until golden and 165°F internally.
  3. Combine diced avocado with cooked rice, season with salt and a splash of lime juice, folding gently.
  4. Allow cooked chicken to rest for 5 minutes, slice, and layer over avocado rice on a serving plate. Garnish with cilantro.
