  1. In a large, heavy saucepan, add 4 cups of water, 2½ cups of milk, minced garlic, a bay leaf, salt, and black pepper. Bring to a gentle boil, stirring occasionally.
  2. Gradually whisk in 1½ cups of polenta to avoid lumps. Continue whisking vigorously until well incorporated.
  3. Reduce heat to low and simmer for 35-40 minutes, stirring frequently until the mixture thickens to a silky consistency.
  4. Remove from heat and stir in 2 tablespoons of unsalted butter and ½ cup of freshly grated Parmesan until melted.
  5. Taste and adjust seasoning if needed. Discard bay leaf and serve immediately.
