- Step 1: Preheat your oven to 350°F (175°C). Coat a 9x13 inch baking pan with butter and line it with parchment paper.
- Step 2: In a medium bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt.
- Step 3: Beat 1 cup of softened butter and 2 cups of sugar until light and fluffy. Add 2 eggs, 1 cup of sour cream, 1 teaspoon of vanilla extract, and optional banana extract, mixing until combined.
- Step 4: Gradually add the dry ingredients to the wet batter, stopping when just combined. Fold in 1.5 cups of mashed ripe bananas.
- Step 5: Pour batter into the prepared pan and bake for 22-25 minutes or until a toothpick comes out clean.
- Step 6: Cool the bars in the pan for 10 minutes, then lift them out using parchment overhang and cool completely on a wire rack.
- Step 7: For the frosting, beat together 8 ounces of cream cheese and 0.5 cup of butter until smooth. Gradually add in 3-4 cups of confectioners' sugar and 1 teaspoon of vanilla extract until fluffy.
