Step-by-Step Instructions
  1. Add 1 cup of chicken stock (or water) to your Instant Pot, followed by the chicken thighs and breasts. Sprinkle onion powder, garlic powder, and paprika over the chicken. Add salt, BBQ sauce, grated onion, brown sugar, and Worcestershire sauce on top. Avoid stirring.
  2. Securely seal the lid of the Instant Pot, making sure the valve is set to the sealing position.
  3. Select the manual setting on your Instant Pot and set the timer for 15 minutes on high pressure.
  4. After 15 minutes, allow the pressure to release naturally for 10 minutes, then quickly release any remaining pressure.
  5. Remove the chicken from the pot and shred it using two forks.
  6. For a thicker sauce, turn on the 'sauté' setting and let the sauce simmer until reduced. Return the shredded chicken to the pot to coat with the sauce.
  7. Serve the chicken on gluten-free buns, over rice, or in a salad.
