Step-by-Step Instructions
  1. Select the sauté mode on your Instant Pot and heat for about two minutes. Add olive oil.
  2. Add the finely chopped onion and minced garlic to the pot, sautéing for 2-3 minutes until the onion is translucent.
  3. Incorporate the chicken, seasoning with salt and black pepper. Sauté for 2-3 minutes until lightly browned.
  4. Add the rinsed rice, chicken broth, and mixed vegetables. Stir to combine well.
  5. Secure the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
  6. Let the Instant Pot naturally release pressure for 5 minutes, then perform a quick release for remaining pressure.
  7. Stir in the heavy cream and shredded cheddar cheese until well combined.
  8. Serve hot, optionally garnished with fresh herbs.
