- In a small mixing bowl, combine the peanut butter, egg, cocoa powder, monk fruit sweetener, and a pinch of salt. Mix until thick and well-combined. If too thick, thin with water to desired consistency.
- Preheat your mini waffle maker according to the manufacturer's instructions and optionally grease the plate.
- Pour half of the batter into the center of the hot plate. Spread gently and sprinkle half of the chocolate chips on top. Close the lid and cook for 2-3 minutes until no steam escapes.
- Open the waffle maker and carefully lift out the brownie waffle. Repeat with the remaining batter and chocolate chips. Serve warm with toppings as desired.
