Method
 

Step-By-Step Instructions
  1. Preheat your oven to 180°C (350°F) and grease or line a 20cm-square baking tin.
  2. Melt dark chocolate and unsalted butter in a saucepan over low heat for 3-5 minutes.
  3. In a mixing bowl, combine brown sugar, eggs, plain flour, and cocoa powder with the cooled chocolate mixture.
  4. Pour the brownie batter into the prepared tin and bake for 30-35 minutes.
  5. For the caramel crunch, combine caster sugar and water in a saucepan and heat until the sugar dissolves, then boil until golden brown.
  6. Stir in single cream and butter, then fold in puffed rice cereal.
  7. After brownies cool, pour the caramel crunch over them.
  8. Melt dark chocolate and single cream for the ganache and pour over the caramel layer.
  9. Let the ganache set for at least 3 hours before slicing.
  10. Serve with vanilla ice cream or fresh berries.
