Step-by-Step Instructions
- Combine oil, soy sauce, brown sugar, lemon juice, minced garlic, grated ginger, chopped red chilli, and chopped lemongrass in a food processor, blend until smooth, and season with salt to taste.
- Place chicken wings in a mixing bowl and pour the marinade over, ensuring each wing is coated. Cover and marinate in the fridge for at least 30 minutes.
- Preheat your air fryer to 200°C (390°F) for 5 minutes. Arrange marinated wings in a single layer in the air fryer basket.
- Cook the chicken wings in the air fryer for 15 to 20 minutes, turning halfway through until golden-brown and an internal thermometer reads 75°C (165°F).
- Toast roughly chopped peanuts in a dry pan over medium heat for about 5 minutes until golden brown.
- Transfer cooked wings to a serving platter, top with toasted peanuts and garnish with finely chopped red chilli and spring onions.

Notes
Allow chicken wings to marinate overnight for enhanced flavor. Space wings in the air fryer for even cooking.
