  • 1 cup Unsalted Butter softer at room temperature

  • 1 cup Light Brown Sugar
  • 1 large Large Egg
  • 1/4 cup Molasses
  • 1 teaspoon Vanilla Extract
For the Chocolate Coating
  • 2 cups White Chocolate Chips for dipping
  • 1 tablespoon Shortening can substitute with coconut oil

Method
 

Dough Preparation
  1. Cream together unsalted butter, granulated sugar, and light brown sugar in a mixing bowl until light and fluffy, about 3-5 minutes.
  2. Add large egg, molasses, and vanilla extract, mixing until combined.
Dry Ingredients Mixing
  1. Whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a separate bowl.
  2. Gradually add dry mixture into wet ingredients, stirring until just combined.
Chill Dough
  1. Cover dough with plastic wrap and refrigerate for at least 1 hour.
Baking
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop rounded balls of dough onto baking sheet, leaving 2 inches apart, and bake for 10-12 minutes.
Dipping Chocolate
  1. Melt white chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dipping and Decorating
  1. Dip cooled cookies halfway into melted white chocolate and allow excess to drip off.
  2. Decorate with festive candy melts or sprinkles if desired and let chocolate set completely.
