Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Thinly slice the Yukon Gold potatoes into even rounds, about 1/8-inch thick.
  3. Melt butter in a saucepan, whisk in flour to create a roux, cooking for 1-2 minutes until golden.
  4. Gradually add milk and cream to the roux, whisk continuously and bring to a gentle boil.
  5. Remove from heat and stir in mozzarella and cheddar cheese until melted.
  6. Pour half of the cheese sauce over the layered potatoes in the baking dish.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove foil, pour remaining cheese sauce over the potatoes, and bake uncovered for an additional hour.
  9. Let rest for a few minutes, garnish with parsley or dill, and serve.
